Our craft wines

The wines are fermented slowly and aged gently in low room temperature which allows the wine to develop rich in taste and fragrance (bouquet). The berries contain plenty of acid and added sugar is needed after fermentation in order to make a wine with balanced taste. This is the biggest difference to grape wines. The sugar content classifies our wines sweeter that they actually taste due to the acidic nature of the wine.

The clarity of our wines are achieved by sedimentation only. As we don't filter the wines and we only use a minimal additivation of sulphur, we recommend to consume the wines in about 6 months time. The wines may contain minimal amount of sediment in the bottle because the wine is not filtered. Filtering removes all excess particles from the wine, also ones which bring colour and taste, and that is why we do not filter Kajabaca wines. In order to provide longer shelf life to our wines we could add plenty of sulphur and other preservatives to the wines, but that is against our wine making filosophy. Rather fresh than additivated. Once opened our wines are recomennded to be stored in fridge.


Kajastus Green Currant Wine


Lovely fragrance and a long taste in the green currant wine can be a surprise to a person who has experienced berry wines before. The colour of the wine is light and tinting a bit towards green. This nuanced wine goes extremely well with asian kitchen, fried white fish or with goat cheese- to name a few of the hints we have received from the customers

Kajastus red gooseberry wine

The beautiful rose colour of the gooseberry wine takes your thoughts to summer and the patios. The wine is great to be enjoyed in good company, but goes well also with seafood and fish. We have had many visitors who recognize gooseberry as a berry for jams and puddings and they have been surprised how well gooseberry also works in wine.

Kajastus Black Currant Wine

Black currant is the very traditional base for home-made wines in Nordic countries and most wineries in Finland also carry black currant wine in their product slate. You will notice that Kajabaca black currant wine is something special once you taste it. The wine is sweeter that the other Kajabaca wines and the impression of nectar brings back memories to many tasters

Koobee

Karviaisviinispritzer

Ihastuttava, raikas, kauniin punainen terassijuoma, saunajuoma, seurustelujuoma. Koobee on hapokas, pirteä ja vähäsokerinen juoma.

Koobee tehdään Kajabacan karviaisviinistä, kylmäpuristetusta karviaismehusta, vedestä ja pienestä sokerilisäyksestä. Säilöntäaineena on ripaus kaliumsorbaattia. Juoman väri ja maku tulee vain marjoista.

Juoma hiilihapotetaan ja pullotetaan 0,33 l lasipulloihin tai 0,5 l PET-pulloihin. Myös PET-kegi vaihtoehtoa tutkitaan.
